I’d be lying if I said a hefty slice (or three) of my Mum’s Lemon Drizzle Cake wasn’t a big part of the pull of my many weekend trips to Brighton that I make. Family, friends and R&R time aside of course. My Mum knows how to bake a good cake and this lemon tray bake with a crispy sweet and sour topping may just be one of her best. It’s a Mary Berry recipe that she found a few years back and ever since it’s been a constant in the kitchen cupboards and I’m really ok with that. So today, after scoffing down on it many times, I’m sharing with you my first attempt at making it and you know what – it really was rather good if I say so myself. And seriously so easy to make. Just be warned that you’ll want to keep the 12 squares for yourself…
