I know I keep bleating on about Deliciously Ella by Ella Woodward, but hear me out one last time on this because this book is like healthy eating gold. Recipes that are varied, without any difficult to source ingredients, all look pretty straightforward to make and the ones that I have got round to whipping up in my kitchen have been downright yummy. Case in point: her Sweet Potato Brownies (the recipe for which can also be found on her website). With the main base being Dates, Raw Cocao Powder (I found this in Holland & Barrett) and Sweet Potato, it’s hard to imagine once you pop ’em in your mouth. They taste seriously sweet, chocolatey and rich and because Mark is anti-dates, I’ve had to scoff down a whole batch myself which wasn’t a problem at all but they lasted well and keeping them in the fridge meant they were even more gooey than normal. Definitely one to try, especially for sweet toothed souls like myself who need a daily dose of chocolate/cake/candy (I could very easily conform to the diet of Buddy the Elf).
Another favourite from Ella’s book are the Nut Butter Stuffed Dates, which are exactly as they sound. Sweet and squishy Medjool Dates with a bit of Almond Butter sandwiched in-between are almost like natures version of Snickers. With my recent Almond Butter obsession I may have purchased a bumper tub (again Holland & Barrett) – but just look how happy it made me! Ok, that’s it – promise. Until next week…
