If, like me, you’re a big fan of feeding your freezer and fridge then a plan-free Sunday (which is what we’ve got today after what feels like month’s of chocker-blocker weekends – hooray!) is the perfect day to fill ’em up. Here are three recipes that I like to rustle up that should keep you going for a few days at least. All easy, no fancy pants ingredients and will take you an hour and a bit to make…
FOR BREAKFAST – My Bircher Muesli. I was chatting to my mate the other day and she was talking about an overnight oat recipe that she was prepping for breakfast every evening and that got me thinking of this Bircher Muesli recipe that I used to make all the darn time. I love it because it requires zero effort each morning and is as easy as whipping it out of the fridge and tucking in. I’m currently out of apple juice, so have been subbing in more almond milk and adding an extra apple. I’ve also been throwing in a slug of maple syrup and almond essence to sweeten things up and I like to add some strawberries on top each morning because I’m trying to use them up before they go off. Lush.
FOR LUNCH – Oh She Glows Our Perfect Veggie Burger. I love a good veggie burger. I’d say on average at least every other week I trial a new recipe, so I’ve chowed down on my fair share. Out of all the ones I’ve tried I’d say this one from Oh She Glows gets top marks. Nice and juicy in the middle, thanks to the black beans, but crispy around the outside. Pop it in a bun with a bit of greenery and avocado (avocado is important in my eyes, as it adds a bit of creaminess to the whole thing) and it’s downright delicious. I keep leftovers in the fridge and heat up under the grill for the next day’s lunch. Serve with sweet potato fries for something heartier, or crumble over a salad if you’ve run out of buns.
FOR DINNER – Waitrose LOVE Life Healthy Chilli Chicken. This has been a regular recipe in our household for years now ever since Mark bought it home amongst a wad of recipe cards (he’s a sucker for those things and tries to collect them each month like they’re Pokemon cards). It’s a really simple recipe to make and is basically a Chilli Con Carne, but instead of using beef, uses chunks of chicken for its meat content. I mix it up and throw in any leftover veggies I have too (hence the sweetcorn (again!) in the picture) and I have been known to make it in the slow cooker as well. You don’t get the sauce as thick, but there’s nothing like a bit of slow cooked chicken. I throw everything in and then leave it on medium for about eight hours. Lovely.
