I love breakfast. In fact I could happily live off breakfast foods from AM to PM. There’s nothing I crave more than a bowl of Coco Pops/Cinnamon Grahams/any sugar-coated cereal. Though (unfortunately) I know these aren’t the greatest thing in the world to fill my belly with when I wake up each morning, so I’m always on the lookout for something that’s sweet enough to satisfy my sweet-tooth first thing, keeps me going until lunchtime and fuels in a healthy way… that’s where bircher muesli comes in.
It’s thick and filling and depending on what you add to it, it has that sweetness that tricks my brain into thinking that it’s eating something akin to Honey Nut Cheerios. Great. It’s like a stodgy cold porridge with fruit and nuts and trust me it tastes better than it sounds. The best bit is that it’s easy to make and can be made in advance so it’s as easy as rolling out of bed and slopping some into a bowl. I like to go for a seasonally appropriate apple and cinnamon flavour, but you can really add in whatever you like and fancy to the base mixture. I’ve got a tin of pumpkin knocking around that I’ll think I’ll throw into my next batch as an experiment…
APPLE & CINNAMON BIRCHER MUESL (makes 3 portions): A filling overnight-oats recipe that keeps you fired up till lunchtime and feels naughty enough to satisfy sugar cravings. Add in your own fruit, nut and spice combinations as you please.
You will need: 200g Oats, 200ml Almond Milk (or whatever milk you fancy), 200ml Apple Juice, 100g Plain Yogurt, then whatever flavourings you want, I add: 1 Large Apple, 2 TBSP Sultanas, 1 TBSP Honey (optional), 1 TSP Cinnamon and a Sprinkling of Flaked Almonds
Add all your base ingredients – oats, milk, juice and yogurt – into a large bowl and mix. Grate the apple into the mixture then add the rest of your fruit, nuts and flavourings. Give it another big stir and you’re good to go. I know – that was easy. It’s best left overnight covered in the fridge to soak and then I find this mixture can be used for the next three mornings. If it feels too sniff when you go to serve it, just add another dollop of yogurt and stir to soften it a little. Dress with a few more almonds and sultanas and add some maple syrup if you fancy. Simples.
